Japan is witnessing a nationwide fury over unhygienic pranks at sushi conveyor belt restaurants and besides has&nbsp;triggered&nbsp;stock slumps, venue overhauls&nbsp;and even legal action. Several prank videos on social media – dubbed ''sushi terrorism'' – show people indulging in unhygienic acts at such restaurants. On Twitter, a nearly 50-second video shared on January 29, showed&nbsp;an apparent teenage boy licking the top of a communal soy sauce bottle and placing it back on the conveyor belt while checking around to ensure that no one is watching him. He then proceeds to lick the rim of a teacup. The video ends with the teenager licking his fingers and touching a piece of sushi as it goes past the belt.

A report by the news agency AFP on Friday (February 3) said the video, which got over 39 million views, was filmed at a branch of Sushiro in Gifu city. The act prompted stocks in the restaurant's parent company to plunge nearly five per cent.&nbsp;

Some other videos emerged of customers at different chains putting wasabi on passing pieces of sushi or licking the spoon in a tea powder container.&nbsp;

Taking to Twitter, one user said, "This is sickening," while another tweeted, "I can't go to conveyor belt sushi restaurants anymore."

According to a statement, Sushiro – the Japanese multinational conveyor belt sushi speciality store – said the teenager in the video apologised but the firm filed a formal police complaint. "As a company, we will continue to respond firmly with both criminal and civil cases," Sushiro said.&nbsp;

It added that soy sauce bottles at the affected store were replaced, and cups were cleaned. The firm also announced new restaurant policies.

The AFP report said that at Sushiro's Gifu branch and other nearby branches, customers would now take utensils and condiments to their tables from a serving point. And across Japan, diners would be able to request disinfected tableware.&nbsp;

Two other sushi chains affected by ''sushi terrorism'' — Hama-sushi and Kura Sushi — said they were planning to take legal action. A report by the Jiji press agency said that Kura Sushi was planning to install cameras above conveyor belts to monitor customers.&nbsp;

However, Bun cautioned against cicadas becoming a "gourmet food," fearing they could even be "eaten away like we have with so many species that we've become obsessed with over time."&nbsp;

Unlike the spicy neon concoction familiar to many fans of Japanese cuisine, which is in fact made from horseradish, real wasabi is pale-green and offers a complex, mildly piquant flavour.

In Japan, wasabi is difficult to grow because of its&nbsp;knobbly root which is extremely difficult to grow,&nbsp;and consequently expensive to buy, with most of it snapped up by wholesalers.&nbsp;

According to 62-year-old Yoshihiro Shioya,&nbsp;a Japanese farmer,&nbsp;"The most important requirement is crystal-clear water, in abundance."

"It's absolutely necessary that the water temperature stays between 10 and 15 degrees Celsius, year-round," added Shioya, whose family has cultivated wasabi in the region for seven generations.

Patience is key -- each wasabi crop can take a whole year or even 18 months to mature in the large man-made terraces, which serve a particular design purpose.

"The water flows down from the top of the mountain, which has terraces built into it covered with layers of pebbles and sand that filter and purify it," explained Yasuaki Kohari, of Izu's agricultural cooperative.

Once ready, the long roots, topped with a plume of round green leaves, are harvested by hand. The leaves are stripped off and the root, known as a rhizome, is carried away in baskets.

About half of the 550 tonnes of fresh wasabi grown in Japan last year came from Shizuoka, southwest of the capital Tokyo.

Wasabi grows naturally there and has been used in local cuisine for centuries.

Legend has it that it was especially loved and popularised by 17th-century shogun Ieyasu Tokugawa, a military ruler who was one of the unifiers of Japan.

These days it is mostly purchased by high-end restaurants in Tokyo and Osaka.

'Spicy, but with sweet notes'

Wasabi is prepared by grating the root, usually on a small square device with fine metal teeth or topped with coarse sharkskin -- a process done almost immediately before consumption, as its piquancy fades after about 20 minutes.

Its spiciness is produced by a chemical called allyl isothiocyanate, which also gives mustard, radish, and horseradish their pungency, and which scientists say has antibacterial properties.

It is usually served as a complement to raw fish, or alongside buckwheat soba noodles.

Toshiya Matsushita, a sushi chef at a restaurant in central Tokyo with a month-long waiting list, would never dream of using imitation wasabi.

"It feels powdery in your mouth and doesn't have much flavour," he said.

"Fresh wasabi not only masks the smell of the raw fish but also heightens its flavour. It is spicy, but with sweet notes."
