South Korea's famous Kimchi is falling victim to climate change. Climate change is threatening the plantation of Napa cabbage that is used to make South Korea's signature dish, Kimchi.

Warmer weather destroying Kimchi cabbage

The beloved national food of South Korea, kimchi, is produced with fermented cabbage or other vegetables, and factory workers there toil assiduously at a production line producing it.

Despite the commotion, though, South Korea's kimchi producers are having trouble this year because of a shortage of cabbages brought on by climate change, which has caused prices to soar. Additionally hurting business are the less expensive products offered by Chinese rivals who don't have a cabbage scarcity.

One such business, led by Ahn Ik-jin of kimchi manufacturer Cheongone Organic, finds it difficult to get enough cabbages because of the high cost. His factory's storage spaces have almost all been vacated. To maintain production, Ahn has purchased some subpar cabbages. Still, he was forced to increase the price of the kimchi sold to other businesses by two-thirds, to 5,000 won ($3.50) per kilogramme.

Local kimchi production in South Korea has been declining for a while. Over the past 20 years, Chinese imports, which are frequently priced at around a third of locally produced kimchi, have surged to take over 40% of the local market for commercially produced kimchi.

The industry has largely collapsed as a result of recent poor cabbage crops. According to a study by Korea Rating & Data, nearly half of South Korea's 1,000 or so kimchi producers either shut down permanently or temporarily last year or reported no sales.

Korean kimchi producers are hoping that the government's strategy will at the very least stop local suppliers from losing momentum.

"We used to produce 15 tonnes of kimchi a day but now we are only producing 10 tonnes or less," he said. "We need measures for a smooth supply of good quality cabbages."

Such is the sense of crisis surrounding the spicy pickled side dish eaten daily by many Koreans and central to Korean identity. To help ease the situation, the government recently laid out plans to construct two massive cabbage storage facilities by 2025 with an investment of 58 billion won ($40 million).

At 9,900 square metres each, the facilities to be built in the rural counties of Goesan and Haenam will, combined, be equivalent to three soccer pitches in size.

The storage complexes will be able to store 10,000 tonnes of cabbages and pickle 50 tonnes of cabbages daily, said Lim Jeung-guen, deputy director of the agricultural ministry's food industry promotion division, adding that more complexes could be built if the first two work out well.

Kimchi exports from the nation increased 10.7% to $160 million in 2017, riding a wave of interest in Korean culture sparked by things like the boy band BTS and the dystopian Netflix series "Squid Game."

Domestically, meanwhile, there is growing worry that the lack of cabbage would also jeopardise the custom of "Kimjang," or the preparation and sharing of kimchi among families, friends, and communities, which is frequently done in November but is not exclusively so.

China on Thursday released a zodiac calendar involving a 12-year cycle of animals.

In his paper published in the Kashgar University’s Academic Journal, a professor called Li Shinhui, former director of Xinjiang Academy of Social Sciences' linguistic research institute, said that it actually originated in ancient Babylon.

Its astronomical knowledge was spread to India which modified the zodiac system before being disseminated to China during about the 3rd century BC along the Ancient Silk Road.

“Our country is also an agricultural society. This system was introduced into our country during the Joseon era (1392—1910). It is included in the civil servant qualification test here. It is just a cultural heritage of East Asian countries including China, Japan and South Korea.”

In response, a Chinese netizen said, “This system was made based on China’s weather changes. Weather change is related to the region’s geographical environment. China is a large country, while Korea is so small. Can the two countries’ climate features be the same?”

The achievement was reported by the state-run Global Times as “an international standard for the Kimchi industry led by China.”

South Korean media was fast to dispute such a claim and accuse the bigger neighbour of trying to make Kimchi a type of China-made Pao Cai.

Around the globe, there is a craze for Korean food among people and most importantly when it comes to their variety of sauces, dips and their drool-worthy delicacies, which always rules the internet.

There are varieties of K-cousins that have won millions of hearts, but among them, Korean styled fried chicken took the top spot. In the survey conducted last year, 8,500 people in 17 cities around the world were asked to name their favourite Korean dish. Fried chicken topped the list, with 16.1 per cent of votes and even it's the Korean dish that they eat most frequently, followed by kimchi and bibimbap (a Korean mixed rice bowl).

But, what if we tell you that fried chicken is not Korean food.

As per the recent polls, Korean-style fried chicken is the most favourite Korean food of people around the world, but half of Koreans surveyed in another poll do not think it belongs in that category.

A survey of 1,500 Korean nationals by the Korean Food Promotion Institute shows that 63.9 per cent believe that regular fried chicken is not Korean food, while 45.1 per cent say that neither is marinated fried chicken.

As per Koreans, kimchi is the dish that most (99.7 per cent) consider Korean, followed by doenjang-jjigae, buchimgae, savoury pancakes, japchae and others.

Kimchi is a traditional Korean side dish normally made of fermented cabbage, salt and hot peppers.

When asked whether the fried chicken is a Korean dish, Joo Young-ha, a professor of Folklore Studies at the Academy of Korean Studies, said that it should be considered a K-food, adding that this category includes not only dishes that Koreans traditionally think of as Korean, but also dishes served in Korean restaurants or those produced by Korean food factories.

Further, he pointed out that foreign nationals living overseas often come to be interested in K-foods such as samgyeopsal (grilled pork belly), soju, tteokbokki (stir-fried rice cakes) and pajeon (scallion pancake) after seeing those dishes in Korean dramas.

China's agricultural ministry has renamed Kimchi, the aged cabbage dish as Xinqi amid a cultural feud with South Korea.
