In discussing his culinary preferences, Prime Minister Narendra Modi has highlighted a particularly nourishing dish he frequently enjoys. This distinctive recipe combines nutritional value with the rich flavours of Indian spices. During an interview, he detailed the preparation of a paratha featuring drumsticks.
Chef Dhiraj Pokale generously shared the step-by-step guide to crafting drumstick parathas.
1. Begin by washing the drumsticks, cutting them into small pieces, and boiling them in a pressure cooker.
2. Once the pieces are thoroughly boiled, use a masher to mash the vegetables, ensuring to retain the boiled vegetable stock. Strain the liquid carefully and mix it thoroughly with a spoon.
3. Add a blend of salt, turmeric, red chilli powder, coriander powder, amchur powder, asafoetida (hing), ginger-garlic paste, thecha, sesame, coriander leaves, wheat flour, and oil.
4. Knead the ingredients into the flour until achieving a smooth texture, signifying that the dough is ready for rolling with a rolling pin.
5. Sprinkle some flour on the board, rolling the dough balls into the desired shapes. You can also incorporate additional flour in between rolls if needed.
6. In the final step, fry the paratha in a pan and savor it with your preferred chutney
