Preheat your oven to 325°F (165°C). Grease a 9x5-inch loaf pan.
In a large mixing bowl, mash ripe bananas with a fork. Add melted coconut oil (or olive oil), vanilla extract, and honey (or maple syrup). Mix well.
In a separate bowl, whisk together the whole wheat flour, baking soda, salt, and ground cinnamon.
Add the dry ingredients to the wet ingredients and stir until well mixed. If the batter is too thick, add hot water gradually until you achieve a smooth consistency.
If desired, fold in chopped nuts or dark chocolate chips into the batter. Pour the batter into the greased loaf pan. Bake in the preheated oven for about 60-70 minutes or until a toothpick inserted in the centre comes out clean.
