The National Institute of Nutrition (NIN) updated its "Dietary Guidelines for Indians" recently. Its focus was on the impact of lifestyles and ever-changing food habits on our health.
One of the most significant advice highlights the safety and advantages of using earthen cookware. NIN said that earthenware's eco-friendliness, reduced oil consumption, and capacity to retain nutrients are some of the important benefits.
Earthen cookware utensil is made entirely of natural ingredients and uses a natural method (fire). These utensils retain the whole nutritional value of food. The only disadvantage of using a clay pot to cook meals is that it takes twice as long as other methods. It is also breakable.
NIN also warned about the use of non-stick pans. It issued guidelines over the use of metal, steel, non-stick pans and granite stones.
The debate over the use of non-stick frying pan and how safe it really is, has been ongoing for decades. It is advised that people must stop using non-stick pans as it becomes risky if the heat is more than 170°C. We must discard it if the coating is worn out or damaged.
The report stated that cooking in granite stone is mostly Considered safe unless it contains Teflon coating.
Stainless steel is also considered safe. Its handling and cleaning are quite easy.
Caution is needed while using metal utensils as storing acidic foods in aluminium, iron, unlined brass or copper vessels is unsafe.
