Basundi is a rich Indian dessert made with milk, almonds and spices. This simple recipe lets you enjoy this traditional dish in your kitchen. Take a look:

Gather Your Ingredients

Full-fat milk, sugar, saffron strands, cardamom powder and a combination of nuts like cashews, pistachios and almonds are needed to prepare basundi.

Thicken the Milk

Start by boiling the milk in a heavy-bottomed pan. After it reaches a boil, lower the heat and simmer it, stirring from time to time to avoid burning, until the volume is reduced to roughly half.

Add Sugar and Flavourings

Add the sugar, cardamom powder and saffron threads once the milk has thickened. Simmer the mixture for a further few minutes or until the sugar is completely dissolved and the basundi becomes creamy.

Roast the Nuts

In a separate pan, lightly roast the nuts until they are golden brown and fragrant. After letting them cool, roughly chop or crush them with a mortar and pestle. 

Serve Chilled

Transfer the Basundi to a serving dish and garnish with the roasted nuts. For the best taste and texture, chill the Basundi in the refrigerator for a few hours before serving. Enjoy this creamy and indulgent dessert with family and friends.
