Wash the coriander thoroughly and gently pat it dry with a paper towel. Wrap the coriander bunch in a slightly damp paper towel and store it in the refrigerator.
Trim the bottom of the coriander stems slightly. Place the trimmed stems in a jar with about an inch of water, ensuring the leaves stay above water. Loosely cover the leaves with a plastic bag and store the jar in the refrigerator.
Chop the coriander leaves finely. Place the chopped leaves in an ice cube tray, cover them with water or olive oil, and freeze. Once frozen, transfer the coriander cubes to a ziplock bag or container and store them in the freezer.
Tie the coriander in small bunches and hang them upside down in a cool, dry, and well-ventilated area until fully dried. Then, store the dried leaves in an airtight container.
