Curd rice is a traditional dish that is both comforting and nutritious. It is made by combining cooked rice with yoghurt and then seasoning it with spices. Let’s see how to make this delicious dish at home:

1. Rinse 1 cup of rice thoroughly and cook it with 2 cups of water until it reaches a soft, mushy consistency. This can be achieved using a pressure cooker or a cooking pot.

2. Allow the cooked rice to cool to room temperature.

3. In a separate bowl, whisk 1 cup of yoghurt until smooth. Add salt to taste and thoroughly combine.

4. Combine the cooled rice with the yoghurt mixture, adjusting the consistency as desired by adding additional yoghurt or a small amount of water.

5. In a small pan, heat 1 tablespoon of oil. Add 1/2 teaspoon each of mustard seeds and cumin seeds, along with 2-3 dry red chillies. Once the seeds start to splutter, pour the tempering over the curd rice mixture.

6. Garnish with 1/4 cup of grated coconut and 2 tablespoons of chopped coriander leaves before serving.
