Soak 1 cup of kidney beans, chickpeas and cowpeas overnight.
Rinse and boil for about 10-15 minutes on medium flame.
In a large mixing bowl, add chopped lettuce, tomatoes, onion, capsicum, beetroot, carrot and any other veggie of your choice.
For the dressing, add 1 tbsp of mayonnaise and ketchup along with half tbsp of mustard.
Add the three beans and mix well. Enjoy with toasted bread.
