You will need seasonal vegetables such as carrots, beans, potatoes and drumsticks, along with coconut, yoghurt, green chillies, cumin and curry leaves.
Chop the veggies into uniform pieces and steam or boil until tender yet crisp.
Blend grated coconut, green chillies, and cumin seeds until smooth.
Mix the veggies with the coconut paste and yoghurt, seasoning with salt. Cook briefly on low heat.
Heat oil, add mustard seeds and curry leaves until they splutter, then pour over the avial. Serve hot.
