If you are craving some delicious turmeric lemon rice, follow this quick and easy recipe that only takes about 10 minutes.
Cook about 1.5 to 2 cups of rice and let it cool until room temperature.
In a skillet, heat some oil and add half a teaspoon of mustard seeds until they start popping.
Add 8-10 curry leaves. Then add about 3/4th teaspoon turmeric and some red pepper flakes. Reduce the heat and add roasted nuts to it.
Add some water, then add about 2 tablespoons or more lemon juice.
Transfer the rice to the skillet and cook for about 2 minutes, then add salt and lemon, as per taste.
Take it off the heat and cover for about 2 minutes. Garnish with cilantro and serve!
