Gujarati Khichu is a traditional snack made from rice flour and flavoured with spices. It is a simple and comforting dish often enjoyed with a drizzle of oil and a dash of chilli powder.
In a pan, bring 2 cups of water to a boil. Add cumin seeds, carom seeds, green chilli paste (optional), turmeric powder and salt to the boiling water. Stir well.
Once the water starts boiling, lower the heat and add the rice flour gradually while stirring continuously to avoid lumps.
Continue stirring until the mixture thickens and forms a dough-like consistency. It should come together as a smooth mass. You can also add sesame seeds at this stage, before cooking the dough.
Cover the pan and let the khichu steam on low heat for about 5-7 minutes. This helps cook the rice flour completely.
Once done, turn off the heat and let it cool slightly. Serve the khichu in small portions, drizzle with a little oil, and sprinkle with red chilli powder and fresh coriander leaves.
