Fresh full-fat milk, vinegar, salt, thermometer and cheesecloth
Heat the milk in a saucepan and wait until it reaches a temperature of around 85-90°F (29-32°C).
Once the milk reaches the desired temperature, add vinegar. Stir gently for a few seconds.
When the milk curdles up, with the help of a knife or spatula cut the milk into cubes. Cook the curds on a medium flame for five minutes.
Switch off the gas and now separate the curds using a strainer and remove the excess water. Keep the curds in a cheesecloth, press them, and make small balls.
Heat the leftover whey and add some salt to it. Place the cheese balls into the hot whey for a few minutes. Wearing gloves or using spoons, stretch the hot cheese. Repeat this step until your cheese is smooth.
Once your cheese balls are smooth, put them in chilled ice water for a few seconds.
Squeeze the cheese well, wrap it in cling wrap and keep it in the fridge. After a few hours, your cheese is ready to eat.
