Hakka noodles is an Indo-Chinese dish of noodles which is highly popular in India. Here is how you can make this recipe at home:
Cook the noodles in boiling water and then drain them to remove excess starch. Add a little oil to them to prevent them from sticking.
Heat some oil in a large utensil on a high flame then add garlic, spring onion whites, chillies, and onion. Fry them until translucent.
Add thin, long chopped carrots, cabbage, and capsicum and saute for 1-2 minutes until they are partially cooked.
Add noodles, salt, soy sauce, hot sauce, vinegar, and chilli oil. Toss everything to mix and fry for a few minutes.
Add black pepper and spring onion greens and add more salt or sauce as per taste if required. Serve hot with manchurian!
