Wash and peel the sweet potatoes. Using a knife, slice them thinly and evenly for uniform cooking.
To get rid of extra starch, soak the slices in cold water for 20 to 30 minutes. Use a fresh towel to pat the slices dry after soaking.
Add a little olive oil, salt, and your preferred seasonings (such as paprika, garlic powder, or rosemary) to the dried sweet potato slices to give them more taste.
Arrange the slices in a single layer on a baking sheet lined with parchment paper. Bake for 20 to 25 minutes at 375°F (190°C), rotate the dish halfway through, or until it is crispy and golden brown.
Take the chips out of the oven and allow them to cool. Serve right away or store them in an airtight container.
