Cook beets by either boiling or baking them. For baking, wrap the beets in a kitchen foil and put them in a preheated oven at 375°F or 190°C.
Bake the beets for about an hour, or longer if their size is big. Next, cool them slightly, then, peel them and slice them into thick parts.
Blend the cooked beetroots, chickpeas and some garlic in a food processor for about a minute.
Add lemon juice, olive oil, tahini (ground-up sesame seed paste), ground cumin, and salt. You can add more water and tahini if want the consistency to be thinner.
