Shrikhand is a traditional Indian dessert made with saffron and cardamom-infused strained yoghurt. With just a few ingredients you can make this creamy and refreshing sweet at home. To make this tasty delicacy, just follow these easy steps:
Take two cups of thick yoghurt and strain it through a fine sieve or muslin cloth to get rid of extra water. If you want a creamy texture, let it hang for four to six hours or overnight.
Transfer the strained yoghurt to a bowl and mix in ½ cup of powdered sugar. Adjust the sweetness to taste and stir until the sugar dissolves completely.
For added richness in flavour and colour, add a pinch of cardamom powder and a few strands of saffron soaked in 1 tablespoon of warm milk.
Refrigerate the shrikhand for at least one hour, before serving. Enjoy your homemade shrikhand by adding chopped nuts, such as pistachios and almonds.
