Mix well-chopped vegetables, herbs, and spices with soaked tapioca pearls (Sabudana).
To make a soft, smooth dough, combine all-purpose flour, water, and a small amount of salt. Give it half an hour to relax.
Roll out small portions of dough into circles, place a spoonful of filling in the centre and fold the edges to seal the momos. Pinch the edges to secure them.
Arrange the prepared momos in a steamer basket lined with parchment paper. Steam for 10-15 minutes or until the dough is fully cooked.
Serve the steaming hot momos with your preferred chutney or dipping sauce.
