Making Indian-style pasta combines the flavours of traditional Italian pasta with vibrant Indian spices.
In a large pot boil water. Add a pinch of salt and a few drops of oil. Add the pasta and cook until the pasta is firm to bite. Drain the pasta and set it aside.
Heat oil in a large pan and add cumin seeds, finely chopped onions, ginger-garlic paste and chopped green chillies. Saute until the raw smell disappears. Add chopped tomatoes and cook until they turn soft and mushy.
Add turmeric powder, red chilli powder, coriander powder, and cumin powder. Cook the spices and add chopped vegetables (bell pepper, carrot, sweet corn, green peas). Saute for a few minutes until they are slightly tender.
Pour in the tomato sauce or puree and mix well. Cook the sauce until it thickens slightly and coats the vegetables. If you like a richer flavour, add cream at this stage and mix well.
Add the cooked pasta to the pan and toss it well with the masala sauce, make sure that the pasta is well coated with spices. Add garam masala and salt to taste and cook for a couple of minutes to allow the flavours to meld together.
Turn off the heat and squeeze a little lemon juice if you like a tangy flavour. Garnish with chopped coriander leaves and grated cheese. Serve the Indian-style pasta hot, garnished with extra cheese and coriander leaves.
