5 Steps to Make Couscous Salad

Couscous salad makes for a perfect choice for fitness freaks looking for a healthy meal option. It is packed with vitamins and is low in fat.

Step 1

Boil water and pour it over couscous. Cover it and let it sit for 5 minutes. Fluff with a fork.

Step 2

Chop cucumbers, tomatoes, bell peppers, red onions, carrots and avocados.

Step 3

Toss in cooked chickpeas, feta cheese or grilled chicken for extra protein.

Step 4

In a bowl, mix olive oil with lemon juice, salt, and pepper. Pour over the couscous and mix well. 

Step 5

Add some parsley on top and enjoy with a slice of multigrain bread.
