Kashmiri cuisine is renowned for its rich flavours and intricate cooking techniques. Here are five non-veg dishes that you absolutely must try:

Rogan Josh

This iconic dish features tender lamb cooked in a rich, aromatic gravy made with yoghurt, garlic, ginger and an array of spices, including the signature Kashmiri red chilli.

Yakhni

A fragrant yoghurt-based curry, Yakhni is made with slow-cooked meat (usually lamb or chicken) and seasoned with a blend of spices, including fennel, cardamom and cloves.

Dum Aloo

Despite being primarily a vegetarian dish made using potatoes, Dum Aloo often includes meat in its variations. It's a spicy and tangy dish where potatoes or meat are cooked in a thick, aromatic gravy.

Kofta Curry

This dish features meatballs (often made from minced lamb) simmered in a flavourful, spiced gravy. The meatballs are tender and absorb the rich flavours of the sauce.

Marchwangan Korma

A spicy and flavourful korma made with tender pieces of lamb, cooked in a sauce enriched with Kashmiri spices, yoghurt and sometimes dried fruits like apricots.
