5 Easy Steps to Make Traditional Gujarati Panki at Home

Gujarati Panki is a light and flavourful snack made from fermented rice flour batter, traditionally cooked between banana leaves. Here's how you can prepare this delightful dish at home.

Prepare the Batter

Mix rice flour, curd, ginger-green chilli paste and salt in a bowl. Add water gradually to form a smooth, flowing batter. Let the batter ferment for about 15- 20 minutes.

Grease Banana Leaves

 Lightly grease banana leaves with oil to prevent the batter from sticking.

Spread the Batter

 Place a spoonful of the batter on one banana leaf and gently spread it evenly.

Cook on a Tava

Place another greased banana leaf on top of the batter and cook the leaves on a hot tava (griddle) over medium heat. Flip and cook both sides until the leaves turn slightly golden and the panki is steamed within.

Serve

Carefully peel off the banana leaves and serve the panki hot with green chutney or curd for a delicious snack.
