Quality Ingredients: Begin with fresh, high-quality ingredients. Choose premium cuts of meat, fresh spices, and aromatic basmati rice for an authentic taste.

Marination is Key: Marinate the meat in yogurt and spices for at least a few hours, or preferably overnight. This allows the flavours to penetrate the meat, resulting in a more succulent and flavourful biryani.

Perfectly Cooked Rice: Parboil the basmati rice with whole spices until it's about 70-80% cooked. Drain the rice promptly to prevent overcooking. The partially cooked rice will finish cooking during the dum process.

Layering Technique: Layering is crucial for a biryani's distinct flavours. Alternate layers of partially cooked rice and marinated meat, adding fried onions, chopped mint, and coriander between the layers.

Dum Cooking Technique: Dum cooking involves sealing the biryani pot with dough or a tight-fitting lid and letting it cook over low heat. This slow-cooking method allows the flavours to infuse, creating a rich and aromatic biryani.

Fragrant Spices: Use whole spices like cinnamon, cardamom, cloves, and bay leaves for added fragrance. Grind spices like cumin and fresh coriander for a more intense flavour.

Saffron Infusion: Soak saffron strands in warm milk and drizzle it over the biryani before the dum cooking. This imparts a beautiful colour and a distinctive aroma.
