2. Root Vegetables

Potatoes can sprout or become mushy if stored in warm environments, and carrots may become woody or develop off-flavours.

3. Cucumbers

Cucumbers are composed of over 95 percent water and are highly perishable. In hot weather, they may become limp, watery, or even develop a bitter taste.

4. Bell Peppers

While bell peppers can tolerate heat better than some other vegetables, they are still susceptible to sunscald, which can cause patches of the skin to turn white or brown.

5. Peas

Peas are cool season vegetables that prefer mild temperatures. In hot weather, peas may become starchy and lose their sweetness.
