Choose fresh, tender, bright green, and free-from-blemishes okra pods from the market.
Rinse the okra pods under cold running water to remove any dirt. Pat them dry with a clean kitchen towel.
Trim off the stem ends of the okra pods. Trim the tip end as well if it appears tough.
Cut the okra pods into small pieces. This will allow the mucilage to be released more easily.
Place the cut okra pieces in a clean glass and cover them with water. Let the okra soak for at least 4 to 8 hours.
