In a blender, add 1 and 1/2 cups frozen corn kernels, 2 eggs, 1 onion, and 1 cup all-purpose flour.
Add 1/2 teaspoon baking powder, 1 teaspoon garlic powder, 3 tablespoons lemon juice, 1/3 cup cilantro, 1 and 1/2 teaspoons salt, and 1/2 teaspoon ground black pepper and blend the ingredients coarsely.
Transfer the mixture to a bowl and add another 1 and 1/2 cups of frozen corn kernels to the mixture and mix.
Heat some oil in a pan on medium heat. Scoop the fritter mixture into the pan and flatten it a bit with a spatula.
Cook the fritters from both sides until golden brown and serve with a dip!
