Appe or panniyaram is a delicious South Indian appetiser or snack. Here is a simple recipe to make corn appe at home:
In a mixer grinder, add a cup of sweet corn, some chopped ginger and garlic, and a little water. Grind it into a thick paste.
Transfer the paste to a bowl and add 1 cup of semolina or rava, 1/2 cup of yoghurt or curd, and 1/2 cup water and mix well. Let it sit for 30-40 minutes.
Add vegetables of your choice like chopped onion, capsicum, and coriander leaves in the batter.
Add salt, pepper, turmeric powder, coriander powder, cumin powder, chopped chillies or red chilli powder to the mixture and mix well. Then add baking soda.
Grease appe pan with oil and pour the batter into each pocket. Once cooked from one side, flip them and cook the other side. Serve!
