Step-by-Step Recipe for Creamy Mushroom Risotto

Step 1

Heat some olive oil in a large skillet. Add about 650 gms of chopped mixed mushrooms, some salt and freshly ground black pepper. Cook for about 8 minutes and stir occasionally then set aside.

Step 2

Wipe the pan then heat some more olive oil. Add 1 medium chopped onion and some salt. Cook for about 5-8 minutes. Add 2 finely chopped garlic cloves, 1 tablespoon fresh thyme leaves, 1 and 1/2 cups Arborio rice and let it cook for a minute.

Step 3

Add 2/3 cup dry white wine and stir. Cook for about 2-3 minutes. Then add 5 cups vegetable broth, adding 3/4 cup at a time while continuously stirring. Then add 2/3 mushrooms cooked previously and cook well.

Step 4

Add 1/2 cup of grated parmesan cheese and stir well.

Step 5

Transfer to a serving dish and top it with the remaining mushrooms. Garnish with some parsley and grated cheese. Serve and enjoy!
