Made with khoya (mawa), dried fruits, spices and creamy milk, khoya kheer is one of the cosiest winter treats. Follow these simple steps to make this dish at home:
Heat ghee in a pan and add soaked rice. After a minute of sauteing, add milk. Stir occasionally and bring it to a boil over medium heat.
After that, add the grated khoya to the heated milk and whisk until it completely dissolves.
To ensure the rice is soft and the flavours combine, lower the heat and simmer the mixture for 20 minutes, stirring frequently to keep it from sticking.
Use sugar to sweeten the dish and, for added flavour, add cardamom, saffron or any other spices of your choice.
Once done, garnish with nuts or dried fruits and serve warm.
