Wash and dry the kale leaves, then trim off the tough edges. Place the leaves in a bowl.
In a separate bowl, combine olive oil, lemon juice, maple syrup and salt. Whisk until smooth.
Drizzle the dressing over the kale leaves and mix thoroughly to coat them evenly. Set aside.
Peel and dice the apple into small cubes. Add the apple cubes to the salad and toss gently.
Sprinkle crushed almonds on top and serve the salad immediately.
