In a bowl, take about 450 gm of grated beetroot, add 2 tablespoons balsamic vinegar, 1 tablespoon olive oil, 1 tablespoon finely chopped fresh parsley.
Add 2 teaspoons Dijon mustard, 1 large minced garlic clove, freshly ground black pepper and salt to taste.
Mix all the ingredients well and refrigerate for 2-3 hours.
