Heat butter or oil in a pan over medium flame. Add cumin seeds and some chopped onion and garlic. Saute well. Add green chillies and spinach, and cook until the spinach wilts and softens.
Lower the heat and stir in the cream. Add salt, black pepper, garam masala and red chilli powder. Mix well and cook for 2 more minutes until a thick, creamy mixture forms.
Toast the bread slices lightly on a pan or in a toaster. Spread the creamy spinach mixture generously over the toasted bread slices.
Sprinkle grated cheese on top and place the toast in oven for a minute or until the cheese melts and turns golden.
Garnish with freshly chopped coriander. Serve hot with a side of ketchup or green chutney.
