In a food processor, add 1/4 cup fresh lemon juice and 1/4 cup tahini and blend for a couple of minutes.
Next, add 2 tablespoons of olive oil, 1 small minced garlic clove, 1/2 teaspoon ground cumin, and 1/2 teaspoon of salt. Blend for 30 seconds, scraping the sides and until all ingredients are well combined.
Add about a 3/4 cup of cooked chickpeas and blend. Subsequently, add another 3/4 cup of boiled chickpeas and process.
Add 2-3 tablespoons of water and blend to adjust the consistency.
