Medu vada is a traditional South Indian fritter that is crispy on the outside and soft on the inside. Here is how to make this delicacy at home:
Rinse and soak urad dal for about 5-6 hours. Drain the water.
Grind the soaked dal in a blender until the batter becomes fluffy. Add some cold water while grinding if needed.
Transfer the batter to a bowl and whip it again for about 2 minutes on medium speed using a hand mixer.
Add onion, curry leaves, cilantro, ginger, green chillies, crushed black pepper, and salt to the batter and mix well.
Shape the vadas round by dipping your hand in water and making a hole in the centre with your index finger.
Fry the vadas in oil from both sides on medium flame until golden brown. Soak excess oil on a paper towel and serve with coconut chutney or sambar!
