Easy and Healthy Tomato Soup Recipe

This healthy and delicious tomato soup can be easily prepared in under 30 minutes. Here is how to make tomato soup at home easily:

Step 1

In a soup pot, sauté 1 large sliced white onion in olive oil until it lightly caramelises.

Step 2

Add about 4 minced garlic cloves and some herbs and cook for about a minute.

Step 3

Add 15-20 whole fresh tomatoes or 2 800 ml cans of whole or diced tomatoes. Add 4 cups of broth of your choice and bring it to a boil. Cover the lid and let it simmer for 15 minutes.

Step 4

Season with salt and pepper. Pour the soup into a blender and blend until smooth.

Step 5

Transfer to serving bowls and garnish with thymes.
