Leftover rice, grated vegetables (carrots and peas), boiled and mashed potatoes, herbs (parsley or coriander), spices (cumin, salt and pepper) and a binding agent (corn flour or breadcrumbs) are all needed to make a delicious rice cutlet.
In a bowl, combine the remaining rice, mashed potatoes, grated vegetables, spices, corn flour and herbs. Mix everything together until everything is fully blended.
Now, form the mixture into small, spherical cutlets by shaping little sections of it.
After that, carefully add the cutlets to the oil and fry until they are golden brown.
With a side of chutney, ketchup or yoghurt for dipping, serve the hot rice cutlets.
