Lemon rice is easy to make and is ready in minutes. Follow the steps to make delicious lemon rice at home:
Heat a pan and add some oil. Roast peanuts or cashews until golden brown then remove them in a plate.
Pour some more oil and add mustard seeds, chana dal, and urad dal. Fry on medium heat until they turn golden.
Add green chillies, red chillies, ginger, and curry leaves and fry. Then add turmeric, hing, and salt, pour some water and stir.
Once the water evaporates and dal turns soft, remove from heat and add cooked rice.
When the rice is cooled, squeeze some lemon juice and mix well. Adjust the taste, garnish with roasted peanuts or cashews and serve.
