Combine rice, urad dal, and fenugreek seeds. Soak them for 4-6 hours and grind into a smooth batter. Let it ferment overnight.
Grate fresh beetroot finely and set aside. The beetroot will add colour and natural sweetness to your uttapam.
Heat a non-stick tawa or skillet and lightly grease it with oil.
Pour a ladle of batter onto the tawa, and spread it into a thick circle, sprinkle-grated beetroot, chopped onions and green chillies on top.
