Chop about 1.2 kg of pumpkin into chunks, remove the skin and seeds.
In a pot, add pumpkin, 1 sliced onion, 2 peeled garlic cloves, 3 cups vegetable or chicken broth, and 1 cup water. Bring it to a boil then reduce heat and let it cook for about 10 minutes.
Remove from heat and use a hand blender to blend until smooth.
Add salt and pepper to taste and stir in about 1/2 cup cream.
Transfer the soup into bowls, garnish with parsley and serve it with crusty bread!
