Amaranth is a nutrient-packed ancient grain that’s not only high in protein but also gluten-free. Its crunchy texture and rich flavour make it a good choice for a snack or breakfast. Here’s how you can prepare it at home:
One or two tablespoons of amaranth seeds and a stovetop or microwave.
Start by heating a dry pan over medium heat. Give it a few minutes to warm up
Add a small amount of amaranth seeds to the heated pan and evenly spread them out in a layer.
Shake the pan lightly to avoid burning as you cook for around 30 seconds. The seeds will start popping. When the popping slows down, remove from heat.
Let the popped amaranth cool before serving. You can have it as a cereal with milk, yoghurt or as a topping for smoothies and salads.
