In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a smooth, soft dough. Set aside.
In another bowl, mix sattu, chopped onions, green chillies, coriander, lemon juice, mustard oil, pickle masala and salt.
Divide the dough into small balls. Roll each ball into a small disc, place a spoonful of the sattu mixture in the centre, and seal the edges. Roll it again gently into a flat circle.
Heat a tawa. Cook the paratha over medium heat by flipping it once, and brush both sides with ghee or oil until golden brown.
