In a pan, dry roast sesame seeds on low heat until they turn light golden and aromatic. Set aside to cool.
In the same pan, add ghee and grated jaggery. Stir on low heat until the jaggery melts and starts bubbling.
Add the roasted sesame seeds (and chopped nuts, if using) to the melted jaggery. Mix quickly to coat everything evenly.
Let the mixture cool slightly, then grease your hands with a little ghee and shape the mixture into small laddoos.
Let the laddoos cool completely and then store them in an airtight container.
