Onions are perfect for cosy, rainy evenings! Here's a recipe for French Onion Soup a comforting dish that's warm, savory, and ideal for such weather.
In a large pot, heat butter and olive oil over medium flame. Add the sliced onions and sugar. Cook, stirring occasionally until the onions are deep golden brown and caramelized.
Add the minced garlic to the onions and cook for another minute. Stir in the flour and cook for 2-3 minutes. Gradually add the broth, stirring constantly to avoid lumps.
Now add bay leaf and thyme. Bring the soup to a boil, then reduce the heat and let it simmer for about 20-30 minutes. Season with salt and pepper to taste.
While the soup is simmering, preheat your oven to 350°F (175°C). Place the baguette slices on a baking sheet and toast them in the oven for about 10 minutes or until crisp.
Once the soup is ready, remove the bay leaf. Ladle the hot soup into oven-safe bowls. Place a slice of toasted baguette on top of each bowl, then sprinkle grated Gruyère cheese. Place bowls under the boiler for a few minutes, until the cheese is melted and bubbly.
