Place the fried food on a plate lined with paper towels. The paper towels will absorb the excess oil. You can also gently pat the food with additional paper towels.
Set a cooling rack over a baking sheet. Place the fried food on the rack so that the oil drips off and collects on the baking sheet below.
Use uncoated brown paper bags (like those from grocery stores) to absorb oil. Cut the bags open and lay the food on top.
Place slices of bread underneath the fried food. The bread will soak up some of the excess oil.
Allow the fried food to rest for a few minutes on a cooling rack or paper towels to let the oil drain off naturally.
Lightly dust the fried food with cornstarch or flour after frying and shake off the excess. This can help absorb some of the surface oil.
After frying, place the food in a warm oven (around 90°C) on a cooling rack. This will allow any remaining oil to drip off while keeping the food warm.
