Combine butter, sugar, egg, vanilla and flour into a dough. Roll and cut into shapes.
Use half to make cookies with small hollows in the centre, brush with egg wash, and bake at 180 degrees Celsius for 12-15 minutes.
Caramelise sugar, add butter, glucose syrup, cream, and ground pistachios.
Spread jam on whole cookies and top with cookies.
Dust pistachio powder on top for a flavourful garnish.
