Cook Aromatics

Heat oil in a pan and saute chopped onions, garlic and thyme for a few minutes.

Add Potatoes and Milk

Add chopped potatoes, a pinch of salt and milk. Simmer on low heat for about 20 minutes until the potatoes are soft.

Blend Soup

Blend everything until smooth. Add more milk if needed for a creamy consistency.

Season and Finish

Season to taste, then add cream and a sprinkle of nutmeg for flavour.

Mix in Spinach

Saute spinach in butter, season, and stir into the soup. Serve hot.
